Rosa Mexicano serves contemporary Mexican food in an elevated and sophisticated atmosphere. Basically meaning that it’s probably too boojie for myself or Stephen to have gone to before. Luckily for us, his family was in the city already on Mother’s Day.

Rosa Mexicano has 4 locations in NYC – Union Square, First Ave, Tribeca, and the Lincoln Center location where we planned to meet up. Shockingly, not only did they accept our reservation request for 6 people just hours prior, but they also upheld the time slot and seated us promptly. You could still tell that the entire place was packed with people, on both levels of the restaurant, and the place was basically poppin’.

Stephen ordered the Mestiza Enchiladas – chipotle-braised beef with mestiza sauce, crema, cilantro, onion and queso fresco. The “mestiza” sauce, which is specific to only this Rosa Mexicano chain, tasted like a mix of salsa verde and chipotles in adobo. Really nice flavorful sauce which paired well with the braised meat and creamy sauce.

I opted for the Budin De Pollo – braised chicken tinga layered with soft corn tortillas, Chihuahua cheese, roasted Mexican peppers and grilled corn. This was served over a bright poblano cream sauce.

The dish itself was beautiful and the flavors vibrant. Once you open into the layers of tortilla and chicken, you see it’s almost like a Mexican version of lasagna. Loving that Chihuahua cheese by the way!

Both of our meals were amazing, but most importantly it was great to spend time with Stephen’s family. Hope we won’t have to wait until next Mother’s Day to eat here again!
